My husband has spent the last three years attending Georgetown University to earn his MBA while also working full-time. That alone deserves a glass or two raised in his honor, but he has also been incredibly supportive of my goals at the same time so for that (and because he deserves it) I’m throwing a “tassel was worth the hassle” fiesta at our home next weekend for he and his classmates to finally let loose.
First priority: get these grads something to sip on. Of course the usual beer, wine and champagne will be on hand; however, I’d like to have something a little special to celebrate saying “so long” to their studies. For that I’m going with watermelon jalapeño margaritas a la Design Love Fest.
• 8 cups watermelon
• 1.5 cups tequila
• 1 cup triple sec
• 1/2 cup lime juice
• 1-2 jalapeños, thinly sliced
Puree the watermelon, then pour through a fine mesh strainer. combine the remaining ingredients and chill for at least a couple of hours (more if you would like a stronger pepper taste). remove 1/2 of the jalapeños slices and salt the rim of your glasses. add extra jalapeño slices for garnish. yield 4 servings. *Alter recipe to accommodate number of guests (photo sources: tub; margarita styling + photos by sheila gim for designlovefest)
